No gluten, no eggs, no dairy, no wheat, etc and still delicious pancakes. It's possible. You'll be suprised how easy it is. You can use the same pancakes for tortillas. These ones are plain but you can always play around whit your favorite herbs. For example, cinnamon for breakfast pancakes or turmeric when you use it as a tortilla.

2 tbsp | irish moss |
100 gram | whole grain buckwheat flower gf |
200 ml | water |
100 ml | coconut yoghurt |
100 gram | raspberries |
1 handfull | mixed nuts |
1 tsp | honey |
few leaves | fresh mint |

Mix the irish moss paste, water and gluten free whole grain buckwheat flower togheter until smooth using a mixer, blender or vork. Add a quarter of your dough to a medium heathed non sticking frying pan and fry each side about 3 minutes or trust your eyes, when the turn light brown they are ready. When finisch make the other pancakes. No need to put butter or oil in your pan but a little bit of coconut oil does give it a nice extra flavor.
If the dough is to thick add a bit more water, if the dough is to thin add a bit more flower. I love thin pancakes but there are no exact guidllines. Make them as thin or thick as you like.
When your pancake is ready decorate it on your plate. A tablespoon of coconut yoghurt, few berries, few slices of kiwi, handfull of nut, drip of honey and some fresh mint leaves. quick and yummy breakfast.
