Chickpeas are so nutritional and it is such an all-round food. Hummus, cakes, soups, etc. Any herb or sweetener can be used by chickpeas and they are easy to use.
I have never made a dish with chickpeas that didn't taste well or was ruined.That is why I want to applause them.

400 gram | Chickpeas |
2 tbsp | Coconut oil |
1 handfull | fresh Rosemary |
0.5 Tsp | Celtic Salt |
1 big | Red Sweet pepper |
1 big | Eggplant |
2 garlic | Garlic |
1 handfull thyme | fresh time |
Put the chickpeas in an oven bowl together with 1 tbsp of coconut oil, rosemary, thyme and a pinch of salt and bake it for 30 minutes in a 175 degrees oven. The goal is to make them crispy!! so if they are not crispy yet give them a little bit more time in the oven.
Cut your red sweet pepper and eggplant into cubes, add three crushed garlic and a pinch of salt (optional) and bake for 25 minutes until soft.
When ready, mix it all together and Eet Smakelijk ;-)
You can put the two oven dishes at the same time in the oven.
